In a medium saucepan, combine the butter, milk, sugar, and desiccated coconut. Heat the mixture over low to medium heat, stirring occasionally, until the butter is melted and the sugar is dissolved. Remove the saucepan from the heat and let the mixture cool to room temperature.

While the mixture cools, prepare your dry ingredients. In a large mixing bowl, whisk together the flour, baking powder, and salt until evenly combined. Set aside.

Once the milk and coconut mixture has cooled, add the eggs one at a time, whisking well after each addition until fully incorporated. The mixture should be smooth and slightly thick.

Gradually pour the wet mixture into the bowl of dry ingredients. Gently fold the ingredients together using a spatula or wooden spoon until no dry streaks remain. Be careful not to overmix to ensure a tender cake.
STEP 5
Pour the batter into a greased and lined loaf pan that fits your air fryer. Smooth the top with a spatula for an even bake. Place the pan in the air fryer and bake at 170°C (340°F) for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
