Mix 1 tablespoon of cinnamon, 1 teaspoon each of nutmeg, allspice, and ginger, adding ½ teaspoon each of cloves and coriander to create a richly aromatic mixed spice blend.

Cook sliced Bramley apples and pears with lemon juice, adjusting sugar to taste, and the mixed spice blend in a saucepan. Dot with butter, add water, and simmer until tender. Thicken with a cornstarch slurry and cool.
STEP 3
Butter slices of white bread, lining the bottom and sides of a springform tin, ensuring an overlap. Fill with the cooled spiced fruit mixture, then cover with more buttered bread slices.
STEP 4
Bake in a preheated air fryer oven at 360°F (180°C) for 15 minutes until golden. Allow to cool slightly before serving warm, ideally with a dollop of custard or cream.
