Double Chocolate Brownie Cookies

Operating Steps
  • STEP 1
    Sift the cocoa powder, melt the butter and combine with the cocoa powder.
  • STEP 2
    Add the white and brown sugar and beat for 2 minutes in a stand mixer or using a hand mixer.
  • STEP 3
    Use an ice-cream scoop to make even balls of the mixture and place on your baking tray, or roll into smaller shapes with your hands if you don't want to make giant cookies.
  • STEP 4
    Cut up some chocolate or use chocolate chips and mix into the mixture.

    Add the 2 eggs and beat for 1 minute.
  • STEP 6
    Line a baking tray with greaseproof paper and place the balls of mixture on the tray, leaving plenty of space between each ball. Add some chocolate chips to the tops of the balls if you like.

    Now add the salt, baking powder, vanilla essence and flour, mix all these ingredients together, making sure you don't over mix as we are trying to get a thick mixture.
